For this cake, the challenge was to combine coffee with fruit. And what could be more suitable than a stone fruit, whose aromas can sometimes be recognized in slightly fruitier coffee varieties.
Hence the delicious combination of coffee and peach, in this cozy mascarpone cake with peach jelly and coffee.
Ingredients
Coffee cake base
- 150 g soft butter
- 120 g caster sugar
- 2 eggs
- 20 ml espresso
- 150 g self-raising flour
- ½ tsp cinnamon (optional)
- Pinch of salt
Peach jelly
- 500 g peaches (fresh or canned, drained)
- 4 tbsp sugar
- 2 tsp lemon juice
- 4 gelatin leaves (or 2 tsp powdered gelatin)
Mascarpone cream
- 250 g mascarpone
- 200 ml heavy cream
- 50 g powdered sugar
- ½ tsp vanilla extract
Topping
- Fresh peach slices
Preparation
1. Make the coffee cake
- Preheat the oven to 175 °C (top and bottom heat).
- Grease a 20 cm springform pan and line the base with baking paper.
- Cream the butter and sugar together. Add the espresso.
- Beat in the eggs one by one.
- Sift the flour, salt and cinnamon, and fold them lightly into the batter.
- Pour into the pan and bake for approx. 25–30 minutes. Allow to cool completely.
2. Make the peach jelly
- Soak the gelatin in cold water.
- Purée the peaches with the sugar and lemon juice until smooth.
- Heat a small amount (a few spoonfuls) of the purée in a saucepan and dissolve the squeezed-out gelatin in it. Stir this back into the rest of the purée.
- Allow the mixture to cool until it becomes thick (yogurt consistency).
3. Assemble up to this point
- Remove the cooled cake base from the springform pan. Place it on a plate or cake board.
- Carefully spoon the thick peach jelly onto the top of the cake, leaving approx. 1 cm from the edge to prevent leaking.
- Place in the refrigerator and allow to set completely (at least 1 hour).
4. Mascarpone cream
- Whip the heavy cream until thick with the powdered sugar and vanilla.
- Loosen the mascarpone and fold in the heavy cream until smooth.
- Spread the cream over the set jelly. Make a nice dome shape or keep it flat, whichever you prefer. Smooth it out.
- Allow to set in the refrigerator for at least another 1 hour and then garnish with fresh peach slices.
